How to remove Gboard

If you've tried it and aren't convinced, the easiest thing is to uninstall it. But if you want to keep it in the background just in case, just tap the button in the bottom right corner: it will show you the available keyboards and you can always revert to the default keyboard that came with your device.

Gboard vs Swiftkey?

Both options are very similar, but behind Gboard is Google. That said, if you really want to use Google's tools (direct search, translator, search content sharing, etc.), your personal choice should be pretty clear.
